Nicholas Tselementes

Born on the island of Sifnos in 1878. he became the most important food writer in Greece and had an enormous influence on 'modernising' Greek cuisine. He favoured French cuisine and moussaka, as we know it, was invented by him in the 1920's with its bechamel topping coming from his French influence. He wrote the first complete Greek cookbook which took the upper classes by storm and was considered the Greek food 'bible'. Apart from his food writings, he also ran a cooking and patisserie school. Tselementes became synonymous with 'Greek cookbook'.
